When it comes to the long grind that is getting better at art, which do you think is a better way to practice: short pieces that are not that detailed or longer, super detailed pieces?

Both.  They both help in different ways - short ones help you figure out what’s essential for a piece, whereas long ones make you focus on a piece for more than a short span of time would!  You learn different things from both.
